Chilean Corn & Meat Pie

INGREDIENTS FOR MEAT MIXTURE

  • Nonstick cooking spray
  • 4 oz boneless, skinless chicken breast
  • 8 oz extra lean ground beef (5 percent fat)
  • 1 green pepper, seeded and chopped
  • ¼ tsp ground black pepper
  • ½ C raisins
  • 2 tsp olives, chopped

FOR CORN TOPPING:

  • ½ Tbsp canola oil
  • ⅛ tsp paprika
  • 1 medium onion, finely chopped
  • 16 oz frozen yellow corn, thawed
  • ½ C fat-free milk
  • ¾ tsp ground cumin
  • ¼ tsp ground black pepper
  • 1 tsp dried basil

DIRECTIONS

  1. Preheat oven to 400 °F.
  2. Spray a skillet with cooking spray and warm over medium heat. Cook the chicken breast for 4 minutes on each side. Remove from skillet and shred the chicken with a fork. Set aside.
  3. Put beef in the same skillet; cook, stirring constantly, until no longer pink.
  4. Stir in the green pepper, black pepper, raisins, and olives.
  5. Spoon the mixture into an 8” × 8” baking dish. (If you prefer, divide the mixture into four servings and bake in four small ovenproof bowls.) Arrange the chicken on top of the mixture in the dish.
  6. Combine oil and paprika in the same skillet; warm over medium heat. Add onion and cook, stirring frequently, until soft and translucent, about 5 minutes. While the onion is cooking, combine the thawed corn, milk, cumin, salt, black pepper, and basil in a blender, and puree.
  7. Add pureed corn mixture to the cooked onion in the skillet; mix well. Continue cooking for 5 minutes. Spoon the corn mixture over the meat mixture in the baking dish.
  8. Bake until bubbly and nicely browned, 35 to 40 minutes.

Assistant Director of Advising and Retention

This position reports to the Director of Advising and Retention and helps proactively aid the development of programs, policies, and procedures that align with the institution’s retention goals and priorities. The Assistant Director will work closely with the Student Support Success Team to promote persistence and degree completion. Beef & Bean Chili

Throw this in the crock pot before kick-off this Sunday, and serve up delicious warm bowls of chili at half-time!

INGREDIENTS:

  • 2 lb lean beef stew meat (trimmed of fat), cut into 1-inch cubes
  • 3 Tbsp vegetable oil, divided
  • 2 C water
  • 2 tsp minced garlic
  • 1 large onion, finely chopped
  • 1 Tbsp flour
  • 2 tsp chili powder
  • 1 green pepper, chopped
  • 2 lb tomatoes, chopped (about 3 C)
  • 1 Tbsp oregano
  • 1 tsp cumin
  • 2 C canned kidney beans (use no-salt-added to reduce sodium)

DIRECTIONS:

  1. Brown meat in a large skillet with half of vegetable oil. Add water. Simmer, covered, for 1 hour until meat is tender.
  2. Heat remaining vegetable oil in a second skillet. Add garlic and onion, and cook over low heat until onion is softened. Add flour and cook 2 minutes.
  3. Add the garlic-onion-flour mixture to the cooked meat. Then add the remaining ingredients, and simmer for ½ hour.

Director of Admissions

This position reports to the Assistant Vice Chancellor for Enrollment Services and is responsible for the overall leadership of the Admission Office including: recruitment, marketing, application processing and admission decisions, international admission, supervision, budget oversight and development, admissions policy development and implementation, and both long-term and short-term planning for the purposes of meeting University enrollment goals. The Director will provide vision regarding personnel structure, in the Admissions Office, devising and or/revising position descriptions as necessary to optimize outcomes.

StayWell Portal Change

StayWell, the administrator for the Well Wisconsin Program, has a new employee portal in 2020. Remember, the Well Wisconsin Program is available to you and your spouse in 2020 if you have enrolled in the State Group Health Insurance Program for 2020.

You and your spouse will need to create a new account through the new StayWell portal (http://wellwisconsin.staywell.com/).  Please click Sign Up in the upper right corner the first time you go to the new website to create your new account.

Assignments Coordinator

This position reports to the Associate Director of Residence Life and assists in carrying out the mission and philosophy of the Office of Residence Life. The Office of Residence Life provides housing for nearly 2,000 students during the academic year and 2,500 guests during the summer months; and employs approximately 13 full-time staff and 125 student employees. Primary responsibilities include, but are not limited to: a) overseeing housing room and contract administration b) coordination of student billing using the Residential Management System (RMS), and c) providing administrative support.

Area Coordinator (Potential Vacancy)

The University of Wisconsin-Green Bay is currently accepting applications to fill Area Coordinator vacancies that may occur before the beginning of the 2020-2021 Academic Year.  The Area Coordinator (AC) reports to the Assistant Director and assists in carrying out the mission and philosophy of the Office of Residence Life. The Office of Residence Life provides housing for 2,000 students during the academic year and 2,500 guests during the summer. The AC is responsible for overseeing a community of approximately 400 residents; and with the help of Resident Assistants (RAs), strives to develop and maintain a safe, enjoyable, supportive, and inclusive living environment for residents where they can achieve academic success, personal growth, and development. The AC is a member of the Residence Life team and holds administrative responsibilities, participates in committees and meetings, and serves students in a multitude of ways. The AC assumes additional responsibilities assigned by the Director and makes recommendations.

Employees have unlimited Kress Events Center access during winter break

Reminder that UW-Green Bay employees have unlimited access to the Kress Events Center and group fitness classes during winter break. Winter hours, December 21st through January 26th, are as follows:

  • Monday-Friday: 6:30am-9:00pm
  • Saturday: 8:00am-2:00pm
  • Sunday: 1:00pm-5:00pm

Employees also have access to equipment rentals, including snow shoes and cross country skis, at a special university price.
