Cheesey Chicken Rice Soup

In the United States of America, a problem that isn’t discussed often enough is that many people who face food insecurity lack protein. This is not great as protein is essential to the human diet. It provides essential nutrients and keeps one fuller for longer. 

However, a recipe that could completely change the game is Cheesey Chicken Rice Soup. Not only is this recipe packed with protein but it is very delicious and is accessible to those facing food insecurity. 

Ingredients 

  • Two Cans of Chicken 

(For this I recommend using Great Value Chicken. It can be found at Walmart, usually less than a dollar per can, and in my opinion probably the best quality, especially for its price.) 
  • One can of Corn 

  • One can of Tomato Sauce 
  • One can of black beans 
  • One package of Velveeta cheese (or any kind of cheese of your choice) 

  • One Package of Rice 
  • Water 
  • Pot 
  • Bowl 
  • Spoon

Directions

  1. In a large pot add: chicken, corn, beans, and tomato sauce. 
  2. Add four to six cups of water 
    1. If you want the water to be more brothy add more water, less brothy less water. It is all about preference
  3. Bring to a boil then add your rice 
  4. Cook for Eight minutes 
  5. Add in your cheese 
  6. Once the cheese is melted pour it into a bowl and enjoy

    This sounds delicious and filling! It sounds like, if I use less water, I could use it as a burrito filling or an addition to a salad. Versatility is always a bonus for a recipe. I was curious what size cans, package of rice, and package of Velveeta cheese that you recommend using to make your recipe.

    This recipe looks easy and looks like it tastes very good! All of the ingredients seem as though they could be found in the campus cupboard, which makes things even easier. I also liked that you emphasized that this adds protein to your diet. I think this would be a great idea to make extra and have as leftovers throughout the week. Overall, this is a great recipe for students!

I myself often struggle to always add protein to a meal, especially after work or a long day where I just want to eat something quick and simple. This gives people a purpose to read and make the recipe.

      I love this recipe for the simple fact that it’s simple. You would think being meat and dairy free would limit one’s recipes, but not this one. I can substitute all the dairy and meat with my plant-based foods and to me, it’s an even healthier meal. The ingredients remind me of a really simple casserole I make with Impossible Ground Beef. It’s a hearty soup and so comforting on a cold winter day. Great stuff! I already copied it to make this fall sometime!

      1. Hi! Yes, you can substitute the meat and dairy in this recipe for whatever type of meat or vegan meat you choose. You can do the same with the cheese. I just gave those types of meat and cheese as an example because they were the cheapest options but feel free to customize however you like!

    2. Hi! Yes, that’s true I struggle with getting a lot of protein as well. It’s difficult for me because I don’t like a lot of meat. I’m not vegetarian or anything I just don’t like the flavor of a lot of meat so I feel you on that one.

    This recipe sounds awesome! Protein is such a staple and being able to add it into meals easily is always a bonus. It seems like a easy recipe to make and your instructions are easy to follow. Warm meals are always good as well, especially with the colder months coming.
